A Twist on Spinach Artichoke Dip!

So, this is a totally not healthy but OH SO DELICIOUS dip to bring to any fun gathering.  This is a great, simple, go to dish that everyone will be asking you for the recipe for.  I recently made this into a double batch for Super Bowl Sunday then froze the other half to serve at my son’s birthday party.  (Yes, it freezes marvelously) It was a hit at both events!   And… it’s so much better to bring this sort of thing to a party than to have it around the house because you will probably want to eat the whole dish by yourself!
I got this recipe originally from my sister and put my own little spin on it, as I love to do with all my recipes.
I’ve made it several times over the years but haven’t made it in probably 2 years so it’s about time it makes a come back!
spinach artichoke dip ingredients

Roasted Red Pepper – Spinach and Artichoke Dip
  • 1 cup grated parmesan cheese
  • 1/2 cup mayonnaise
  • 8 oz package of cream cheese, softened
  • 2-4 cloves of garlic, minced
  • 14 oz can artichoke hearts, drained and finely chopped
  • 1/3 cup finely chopped roasted red bell peppers
  • 1/2 package frozen chopped spinach, thawed and drained
Combine the parmesan cheese, mayonnaise, cream cheese, and garlic in the food processor and blend until smooth
Add your artichoke hearts, spinach and red bell peppers and stir well
Place the blend in your slow cooker on low for 1 hour or in a casserole dish covered in the oven at 350 for 1 hour
Stir before serving
Try it with crackers, fresh cut veggies, snack bread, French bread or just eat it by the spoonful!

Healthy Pregnancy ~ Choosing the Right Supplements

One of the most frequently asked questions that I get from women is what supplements to take while pregnant.  Since I have been pregnant 3 times; I have a lot to say about this.  I hope you know that you should supplement while pregnant because you are growing another person inside you and regardless of your diet you need the extra nutrients. I have a pretty good nutritional background and know the FDA’s role in regulating ingredients and labeling of nutritional supplements (poor at best). It’s so important to research not only the company but also the ingredients. (Guess what? they are not all listed on the bottle) For my first pregnancy I convinced my doctor to write me a prescription for a prenatal vitamin hoping that they would be better than the over the counter option.  We had moved for my second pregnancy and my midwife group swore that the over the counters were just as good an option and wouldn’t write the script.  I don’t know why I didn’t do any Google searches but pregnant brain had set in and I settled for the over the counter brand.  I suffered from a lot of depression, was very sick and just didn’t feel good.  Yes, I delivered a healthy baby but he also suffered from chronic indigestion and horrible airborne allergies.  Knowing there was better out there, when my two kids were getting older and needing chewables and knowing that we would be trying for a third I finally found what I feel to be the best there is.  I chose Shaklee supplements for this pregnancy and swear by them. I feel great, have tons of energy and my family has never been healthier on their vitamins either!

Again, it is so important to know the history of the company and their efforts to provide quality products.

I am not a doctor but Shaklee has a fantastic team of physicians, like Dr. Jamie, on board and this is what they recommend for pregnancy:

“Because the nutritional needs during pregnancy and lactation are unique to this stage of a women’s life, we strongly urge all women who are pregnant or nursing to discuss the use of dietary supplements with their obstetrician.

However, along with our general recommendation to eat a healthy, well balanced diet to ensure pregnant and nursing women are meeting their nutritional needs, we also recommend a combination of Shaklee supplements that can be used as alternatives to a standard prenatal vitamin once discussed with the Obstetrician.”

An excellent “Shaklee alternative” would be:

2 tablets of Vita-Lea with Iron

2 tablets of B complex for the basic prenatal nutrients, in particular folic acid to help prevent neural tube defects

For women who do not drink milk or eat the recommended number of servings of dairy foods the addition of:

2-4 tablets of OsteoMatrix can help meet needs for calcium,vitamin D and other bone health nutrients

The B-complex and the OsteoMatrix have really made an impact on my energy level.  If I have a day where I need a little boost of energy (and who doesn’t with two preschoolers) I take and extra of each in the afternoon along with my energy tea.

To provide a safe and beneficial amount of omega three fatty acids (ie. DHA):

3 softgel capsules of OmegaGuard per day are recommended to support fetal brain development

It is not uncommon for some pregnant women to need additional:

1 tablet of Iron plus C can be added providing an additional 18 mg of Iron and 60 mg of Vitamin C

And lastly:

Shaklee 180 meal smoothie prepared as directed, and used as part of healthy breakfast or midday snack provides a mother and her growing fetus with an additional 270 calories, 24 grams of high quality protein and 6 grams of fiber.

Some women also choose to take the Shaklee Vitalizer strip for their prenatal; Here’s what Shaklee recommends with that:

“Although Vitalizer is a comprehensive nutritional foundation for virtually all adults, there are some components that might not generally be considered essential in a standard prenatal nutrition program. In addition, certain nutrients such as folic acid were not included at levels intended to support a pregnant mother and her growing baby. The use of Vitalizer during pregnancy should be discussed with the Obstetrician, who may wish to suggest an addition 1-2 B Complex and Osteomatrix as stated above if approved for you.”

 

Here’s some other things that I recommend based on what we do in our home:

I recommend everything that Shaklee recommends with a few additional lifestyle products.

Shaklee 180 Energy Tea for ever more energy.  I didn’t take this with my first 2 pregnancies but I have  really needed extra energy with my 3th baby.  I asked my midwife and she said it was fine but no more than 1-2 teas a day.

Get Clean Non-Toxic Cleaners and Natural Laundry Proudcts because you should NOT be cleaning with toxic cleaners.  If you haven’t switched to natural cleaners now, you should ASAP.  If not for you, for your baby.  This kit has everything you need to start cleaning your way to a healthier home.

Enfuselle Skin Care and Natural Hair Care because you should remove all toxins from your home including and especially your what goes on your skin.  Did you know that anything you put on your skin gets absorbed into your body…where your baby is?  

Natural Daily Care like toothpaste, deodorant, lotions, etc. because why not take out take out all toxins.

Creating Transitions with Pre-Schoolers

 

This is a post I’ve had waiting, kind-of worked on, since OCTOBER!!!  I’ve had quite a fall and quite a winter so far but getting back on track and finding time for ME!!!  Isn’t is so important?  But, “Me time”  ends up being the first thing we put on the back burner until it’s been so long it starts to eat away at us!  Ugh, what to do…  Well that’s a whole different post, so in the mean time enjoy something we have found to be magical over the last few months!

Something we’ve been struggling with here lately is transition!  With an almost 3 year old and a just 4 year old, you can only imagine, right?!  They have an attention span of about 15 minutes and boy can we make messes in that amount of time.  AND THEN… telling them to pick up when all they want to do is jump to the next play thing is something that can send us into the biggest manic meltdown anyone could ever witness.  We have the same problem finishing up play time to head out the door on time, have snack time, dinner, baths, bed… you name it.

Who would have known that it would be better to tell a kid that it’s almost time to do something rather than telling them to stop something right away and do this new thing now.  Ahhhh, can you imagine if there were no yellow in the traffic lights.  Kinda the same thing, right.  Catastrophe all over the place.

Sometime in October, I took my daughter (then 3.5yo) to a garage sale.  She saw this 25 cent timer and she just HAD to have it.  It was nothing pretty, nothing we really “needed”, or wait… was it???  Mommy got a brilliant idea and it just might work!  “Yes, sweetie, you can have it”  She. Was. Trilled!

 

I’ve heard it before and probably read it in a book too but since I have no idea where; I’m the kind of girl who needs it to be my idea, sorry…

Is this the perfect timer?  For us, yes it is because Kennedy picked it out and it is HERS and she loves to share with her brother (most of the time) so it is HIS too.  One that has more numbers on it or even a digital countdown might be better, but this works for us so I am not changing it!

We started using it by just playing with it.  Kennedy has been learning her numbers so we would set it for 1 minute and learned how long it took for 1 minute to pass.  We would see how much we could do in one minute like picking up toys, running laps around the house, dancing, building a tower, brushing our teeth, etc.  We upped the time here and there and learned 5 (medium amount of time), 10 (long time) and 15 (longest time) minutes too.  There were so many ways to incorporate learning from this simple 25 cent timer!!!!

THEN…(just a couple days later)  we started the magic!

TRANSITION! 

The thing we struggle most with at our house.  It was all about to change.

“5 minutes left to play you guys, then we are going to clean up for 1 minute and have snack time”

(I gave them a time they could understand, what they could do in that time and what we would be doing when they were done)

Guess what happened.  They ran to get the timer and set it by themselves!  That’s a YES kind of moment when you do a victory lap in your mind and feel like pinning a medal to your chest, and there was no one there to fist bump me!  But would it last or was it a fluke?  I used it again and again. And, yes, it kept working!

Then we started 10 minutes.  Ten minutes can feel like an eternity to a child most of the time so I try to give them a half way point when we go past 5.  Ten minute times mostly go like this: “10 minutes til Grandma and Grandpa get here”  “10 minutes til we have to leave to go ____”  “10 minutes until bed time”  AND THEN, here’s the kicker…

“Mommy’s going to take a break from ____ and play with you in 10 minutes”

Wow!  Who knew that us mommies have such a hard time remembering how much time we are spending distracted from our kids where 10 minutes can turn into 30 so quickly.  I find myself getting sucked into laundry, dishes, meal prepping, you name it and completely forget the reason I am staying home in the first place!  How often have I told my little one, 1 more minute, 5x or more only to have it be thirty minutes later and they have just found it okay to play by themselves.  Yes, playing by themselves is fine and they need to learn to do it sometimes, but if I wanted them to do that all day long I would have them in day care and work full time.  (That’s just my opinion and my choice of how we choose to raise our children, please don’t get mad if your kids go to day care, they are taken care of and loved there as well.) I LOVE the fact that I get to play with my kids all day and be their mentor and teach them and everything else that comes with being so close to them all of the time.  Taking time out of the day to be 100% intentional with my kids is so important to them and me too!

This has been the best part about the timer! 

“Mommy is going to play with you in 10 minutes after I finish getting dinner ready, can you go get the blocks and put them in the family room while you wait, I’ll set the timer”

BAM!

So, with a little imagination and 25 cents, on a super fun, garage sale adventure with my daughter I was able to change the way we think and react to transition at our house.  Who would have thought that now, 3-4 months later we would still be enforcing it at home.  We love it.  No, we don’t use the timer EVERY single time anymore, but only because we don’t need to.  Of course, it didn’t happen overnight and like everything, it doesn’t work every single time, but like everything else in parenting; consistency is key.  The only things that are going to work and keep working for your family are those things that you find the time to stick to and enforce.  The timer still has it’s home on the kitchen sink window so when we need it we know where to find it, but it’s amazing how we are more aware of the need to find a place to slow down instead of come to a complete stop right away.
